Engineered specifically for the demands of the cutting board and smoker station, this custom-made 6″ trailing-point slicer merges the sweeping geometry of a traditional butcher’s cimeter with the agility and balance of a high-end chef’s knife. Designed to excel at seam butchery, fat-cap trimming, and portioning barbecue, it delivers effortless, flowing draw-cuts without tearing or snagging delicate bark.
The Geometry of the Draw-Cut
Measuring 11 inches overall, the knife is optimized for smooth, fluid motion. The 6-inch trailing-point blade features a continuous, sweeping belly that maximizes effective cutting length while the raised, acute tip provides surgical control for tracing bone, lifting silver skin, and scoring briskets. With a generous 1.5-inch heel height and a deep choil relief, it offers full knuckle clearance on the board and creates an intuitive pocket for a choked-up pinch grip during detailed trim work.

Surgical 12.5-Degree Edge
To complement the fine grain of the AEB-L steel, the edge is hand-honed to a laser-keen 12.5 degrees per side. This acute bevel bites immediately and glides effortlessly through proteins, ensuring single-stroke, clean-faced slices on everything from tender pork belly to whole briskets.
Artisan Split-Scale Handle: Black Ash & Dyed Maple Burl
The handle showcases a striking two-tone construction that pairs rugged durability with organic luxury.
