The Design Philosophy: Versatility First
Measuring 8.75 inches overall, the design prioritizes high-dexterity control. With a blade just 4.5 inches long, it offers the surgical precision needed for trimming silver skin, deboning poultry, or hulling strawberries. However, unlike a narrow paring knife, it features a generous 1.5-inch heel height. This clearance provides full knuckle protection while working on the board, allowing you to slice shallots, mince garlic, or dice small vegetables using push-cuts and light rocking motions normally reserved for much larger blades.
Premium Swedish Stainless Steel
The core of this performance is AEB-L Stainless Steel, a steel originally developed for razor blades and prized by custom makers for its exceptionally fine grain structure. Ground from 3/32-inch stock, the thin profile ensures minimal resistance when slicing through dense food. It takes an incredibly keen edge and, thanks to its high toughness and corrosion resistance, maintains that edge through demanding prep sessions. This blade features a beautiful, hand-rubbed satin finish, offering a classic, clean aesthetic that minimizes the appearance of standard kitchen wear.

To unlock the full potential of the AEB-L steel, this short chef knife is finished with a blistering razor edge. Ground to an acute 12.5 degrees per side, this profile is optimized for laser-like slicing performance, allowing the knife to glide rather than force its way through ingredients.

The handle construction embodies the philosophy of “rugged micarta on an elegant short chef knife.” The scales are crafted from durable Emerald Green Micarta, a material known for its superior toughness, stability, and tactile, confident grip—even when wet with kitchen oils or water.
